A quick recipe...

Vegan Veggie Enchiladas...

No, I'm not vegan, not even a little, but every now 
and then going vegan for a meal just feels right! 
:) These are super easy and super delicious!!

You will need:
1 large zucchini
2 cups of white mushrooms
1/2 a can of black beans, drained and rinsed
onion flakes
garlic salt
olive oil
About a dozen white corn tortillas
1 15 oz. can of Green Chile Sauce (I like Hatch 
or Gebhardt's)
(Feel free to use extra sauce if needed)

Preheat oven to 375 degrees.
Use just enough olive oil to coat veggies lightly 
in a hot pan, sprinkle about a teaspoon of onion flakes 
and season with salt, pepper, and garlic salt. Saute 
until almost tender, then add black beans to heat through. 
Then warm corn tortillas however you like, fill with 
veggies, roll and repeat until pan is full. 
Pour green Chile sauce evenly over enchiladas,
let cook in oven for 15 minutes, remove from oven 
and enjoy!!!
